Today's blog post is dad's favourite brinjal recipe which has been postponed from last many years. As every time after clicking step by step images of this recipe, I drop the idea to post as not happy with the image quality. Finally, I'm ready to share this recipe today as the very first post of 2017. HURRAY! 🎉🙆🙋🎉


Today's recipe is designed for Baingan lovers who find Baingan Bharta recipe difficult, lengthy and time consuming and don't like the smell of roasted Baingan. This recipe is best suited for big family gatherings. It makes me feel Nostalgic, whenever I cook this vegetable.



In my school days, this recipe was always prepared on the Ganesh Chaturthi visarjan day every year in our building complex, and that time one big Ganeshji idol was worshipped in one place by all the building people. Now this trend is almost disappeared as every house has the own Ganeshji idol for 1½ day, so don't get a chance to eat this degh wali sabzi. Super spicy, baingan as a main ingredient cooked with potatoes , peas, cauliflower , soya bean chunks, puffed lotus seeds - makhana and flavored with fresh garam masala powder and cooked in big deep handi (degh). The aroma of this dish will make you super hungry and it'll give you a mad craving for this vegetable, if you ever get a chance to taste this vegetable!

◽Preparation time 13-15 min
◽Cooking time 20-25 minutes

☑Ingredients required 



✔1 brinjal
✔One cup of frozen green peas
✔2-3 medium size potatoes 
✔3-4 onions
✔3-4 tomatoes 
✔1tbsp ginger garlic paste
✔4-5 green chillies 
✔2-3 tsp garam masala powder
✔2-3 tsp coriander powder
✔1 tsp turmeric powder
✔3-4 tsp red chilli powder
✔Salt to taste
✔2-3 tbsp cooking oil
✔Few coriander leaves for garnish
✔2-3 tbsp cashew nuts (optional) 
✔40-50 grams cauliflower (optional) 
✔2-3 tbsp roasted makhana - puffed lotus seeds (optional) 



☑Method


🛁 Step 1 Mise en place

Onions - peeled and finely chopped


Tomatoes - washed and finely chopped or puree it

Ginger - garlic - green chillies - make a coarse paste




Baingan - cut into small cubes - keep them in acidulated water (add a few drops of lemon juice in the water and dip the baingan cubes) to avoid oxidation or cut them as an when required for the recipe.



🛁 Step 2 -  Cooking time

◾Heat oil in a deep and heavy bottom fry pan. Add the finely chopped onions and saute till the onions turn light brown.



◾Add tomatoes and ginger- garlic - green chilli paste. Cook till tomatoes turns pulpy and oil separates from the masala. 



◾Add the chopped baingan, potatoes, peas and mix it well.



◾Now add turmeric powder, coriander powder, red chilli powder and salt to taste. Combine well and saute for a min or two. 



◾Add 1 cup water, cover it with lid and simmer for 10-12 minutes till done. Keep stirring in between to avoid sticking.




◾Mash it well with the help of cooking spoon. Lastly add garam masala powder and mix it well. Cook it for 2-3 minutes. 




◾Serve hot, garnished with the fresh coriander leaves. Serve it with chapati or with split green moong dal rice.
