How to make Baingan peanuts masala fry | shallow fried eggplant peanuts masala fry.
Sharing another variation of Baingan masala fry. In today's recipe brinjals are fried and flavored with a delightful mix of roasted peanuts and Indian spice's to give a unique and spicy taste. This is again a must try brinjal recipe.
Today's recipe is very unique and scrumptious recipe of brinjals, as we're going to use big brinjals which are normally used for making Bharta and not for shallow frying. As mom is very passionate about brinjals so i love to prepare brinjals in the best possible ways.
Today's recipe is very simple, but very delicious brinjal preparation. This recipe again comes under fast to cook good to eat recipes. In today's preparation brinjals are cut into thick rounds, then shallow fried and flavored with peanuts and Indian spices. This is again side dish recipe, but you can enjoy this as a main course recipe as this taste awesome with chappati. To enjoy this recipe serve it immediately after preparation.

☑ Ingredients required ⬇
⚫500 grams brinjal (eggplant / Aubergine)
⚫2tbsp coriander powder
⚫2 tbsp roasted, ground peanuts
⚫3tsp red chilly powder / or use whole Kashmiri red chillies as it will give you awesome taste. Grind that with roasted peanuts..
⚫⅓ tsp turmeric powder
⚫1 tsp dry mango powder
⚫1tbsp sesame seeds
⚫Salt to taste
⚫Cooking oil for frying
Method ⬇
☑ Step 1 mise en place
♦ Wash and pat dry the brinjals with clean kitchen cloth. Remove and discard the stems. Cut them into thick rounds Give criss cross lines for faster and even cooking, but make sure you don’t run deep to cut it off! Important point : follow brinjal cutting work after placing cooking oil for shallow frying to control the oxidation process of brinjals. Please don't cut them too far ahead of cooking.
♦Now, take above mentioned dry ingredients in a plate. Mix all well, Keep it aside until called for.
☑ Step 2 - Cooking time
♦ Heat oil in a fry pan and shallow fry the baingan on both sides on high fire for 5-6 minutes and a minute or two on slow flame till turn crisp and golden brown.. Drain the excess oil. Remove and keep it aside.
♦Now, take above mentioned mixed dry ingredients, coat this masala nicely over the fried brinjals. Place them back in the fry pan or on flat tawa, if needed, add a tsp cooking oil, toss them gently on both the sides. Cook them in a slow flame covering lid for a minute or two. Serve hot..
That's so sweet of you Deepa that you try to make new variations for your Mom! In my case, my Mom does that! ;) I wish I could do the same!
