Sweet mango pickle recipe with step by step photos – raw mango pickle flavored with Nigella seeds (Kalonji /onion seeds,) fennel (sanuf) and some more spices.



Hurray! MANGO SEASON IS BACK! Summer in India for foodies is synonymous with the mango season. My summer season will be incomplete without making this Sweet mango pickle.





My today's recipe is a must try for mango lovers. This pickle is also known as Aam Ki Launji.  This Sweet and Sour Raw Mango Chutney is very easy to cook, and gets cooked within 10-15 minutes. It is a perfect accompaniment for this summer season with Indian meals. You can serve it with roti or paratha or as a great spread on your toast or serve it with sandwiches ..






Sweet and Sour Raw Mango Pickle is a lip smacking, delicious, sweet, tangy, spicy pickle which is made with raw mangoes, sugar and spiced with Nigella seeds, fennel seeds, cloves, peppercorns, black cardamoms and red chilly powder.

◾INGREDIENTS REQUIRED 



  • 550- 650 g Sugar Or take equal quantity of Mangoes and sugar, if want to preserve it for longer time. 
  • 1 kg raw mangoes
  • 2 tsp Kalonji (Nigella/ onion seeds)
  • ½ tsp fennel (Sanuf)
  • 10-15 peppercorns
  • 6-7 cloves
  • 1 no. Black cardamom
  • 3-4 Bay leaves
  • 3-4tsp red chilly powder
  • 1tsp salt
  • ½ tsp black salt
  • 1-2 tsp vinegar 








✒COOKING INSTRUCTIONS

◾STEP1 Wash, peel and slicing of raw mangoes 




♨️Wash, Peel off the skin of mangoes and slice into long thick pieces.








◾Step 2: Make a sugar syrup


♨️ Boil ½ cup water with sugar in a deep non-stick pan and cook till the sugar is completely melted. . When you see small bubbles resembling snow flakes in sugar syrup, add mango slices










◾Step 4: Cook


♨️ Add all of the above ingredients and mix together. Cook it on slow flame for 7-10 minutes until sugar syrup is concentrated and the chutney is thickened. Remove, cool and add 1tsp vinegar.













◾STEP 5 STORE AND SERVE




♨️ Let it gets cool down completely. Store in a sterilized glass jar or in an airtight container, can be refrigerated, up to 3-5 weeks. Serve it as an accompaniment with Paratha or chapattis or as spread on your toast.

Aam Ki Launji actually sounds very correct and perfect word for this recipe. I am proceeding to incorporate this in the recipe details. We call it Aam Ki Khatti Meethi Chutney. Like carrot pickle, this chutney is prepared in many rounds every season, as it gets finished so fast:D

    Can we use jaggery instead of sugar.....

      Thanks a lot dear. Really appreciate your valuable input. Yes, jaggery can also be added instead of sugar. Infact my dadi amma use to make this pickle in jaggery only. I'm not so fond of jaggery, though considered healthy, but I find with sugar more tempting..
